// This study analyzed shear and extensional rheological properties of thickened beverages made with various hydrocolloids for dysphagia management. Fluids were standardized by shear viscosity, showing variable shear thinning behaviors and differing extensional properties, with HPMC, CMC, and MC having high extensional viscosity, and STA the lowest. No correlation was found between shear thinning and extensional viscosity across hydrocolloids. The findings indicate that shear and extensional rheology assess different fluid properties, suggesting both should be optimized to enhance swallowing safety and efficacy.
